Veg Cheese Croquettes with Left-Over Rice

Ingredients

  • 2 cup  leftover rice
  • 1 cup  onion chopped
  • ½ cup  carrot chopped
  • ½ cup  capsicum chopped
  • 2 green chillies chopped
  • 1 teaspoon  ginger grated
  • ½ cup  coriander
  • 1 cup  boiled potatoes grated
  • 2 teaspoon  salt
  • 1 teaspoon  red chilli powder
  • ½ teaspoon  black pepper powder
  • 2 cup  bread crumbs
  • cheese cube sticks as needed
  • 1 cup plain flour
  • 1 cup corn flour
  • water as needed
  • oil to fry

Instructions

To Prepare Mixture & Croquettes

  • Take all the dry ingredients like leftover rice, onion, carrot, capsicum, green chillies, ginger, coriander, boiled potatoes in a bowl and crumble everything together to hold a shape
  • Add all the spices salt, black pepper powder, red chilli powder and combine everything together
  • If the mixture is too sticky, then add two tablespoons of breadcrumbs and one tablespoon corn flour to the mixture
  • Now grease your palm and take around 2 tablespoon mixture. Make a cavity and fill cheese cube in it. Close the cavity and roll the mixture in a croquette shape ball
  • Keep on a plate and dust some plain flour on the balls for easy and non-sticky handling

To Coat Croquettes in Slurry & Bread Crumbs

  • In a bowl, take 1 cup corn flour, 1 cup of refined flour and 1/2 teaspoon salt
  • Now gently add water to prepare flowing batter/slurry to dip the croquettes
  • Dip croquettes in the slurry and then coat them with breadcrumbs
  • Keep the croquettes in breadcrumbs for around 10-15 minutes

To Fry Croquettes

  • Heat a pan and add oil to it
  • Once oil is hot, fry croquttes balls in it on slow flame for even cooking
  • Gently flip the side after 2 to 3 minutes
  • Once crispy from all the sides, take out on a plate lined with tissue paper to absorb excess of oil
  • Serve hot with ketchup or chutney

Tips & Tricks to Make Croquettes

  • make croquettes with the leftover rice, not the fresh ones. You can also make these without rice and simply using potatoes
  • If you feel mixture is very sticky then add 2 tablespoon of breadcrumbs and 1 tablespoon of cornflour to it and mix again
  • Once you coat the croquettes in breadcrumbs, leave them in the plate of breadcrumbs for 10-15 minutes
  • Heat the oil on high flame but fry croquettes on slow flame to allow even cooking

6) Some grated ginger

7) Add some fresh coriander leaves

9) Now add salt to taste
