Instant Jalebi | No Yeast No Fermentation Jalebi | 15-Minute Jalebi Recipe

Ingredients

For Syrup Preparation:

  • 2 cups sugar
  • 1.5 cup water
  • 2-3 lemon wedges or ¼ tsp lemon juice
  • 2-3 tsp milk
  • ¼ tsp cardamom powder or 1 pod of cardamom
  • 5-6 strands saffron/kesar optional

For Batter Preparation:

  • 2 cups refined flour/maida
  • ½ cup sour curd
  • 1 tsp bakinf powder
  • ¼ tsp orange/yellow food color
  • water to make a thick but flowy batter

For Frying:

  • 2 cups clarified butter/desi ghee

Instructions

For Syrup Preparation:

  • Heat a pan and add 2 cups sugar to it
  • Now add 1.5 cups of water and mix it until sugar dissolves in the water
  • Add 2-3 lemon wedges / ¼ tsp lemon juice to prevent crystalization of sugar
  • Add 2-3 tsp of milk and let it boil
  • With the help of the ladle take out all the impurities separated from the syrup along with the lemon wedges
  • Now add ¼ tsp cardamom powder or 1 pod of cardamom
  • Add 5-6 strands of saffron/kesar to it
  • Let the syrup cook on medium flame until it gets to one string consistency
  • Once you get 1 string consistency, turn off the flame and keep the prepared syrup aside

For Batter Preparation:

  • In a bowl, add 2 cups of refined flour/maida
  • Add ½ cup sour curd
  • Add 1 tsp of baking powder
  • Start mixing these by adding water in batches
  • Prepare a thick but flowy batter out it
  • Now add orange/yellow food color to it and combine everything properly
  • Now take a piping bottle
  • Fill the prepared batter in the bottle

FOR FRYING JALEBIS:

  • Heat a frying pan, and add 2 cups of clarified butter/desi ghee to it
  • Once hot, make close swirls of batter in the oil applying uniform pressure
  •  Cook the jalebi from both sides until crispy. Once done take out a plate and keep aside

FOR SOAKING JALEBIS:

  • Dip the fried jalebis in the prepared sugar syrup. Don’t dip them beyond 30-40 seconds
  • Take out on a plate and serve by garnishing with some almonds/pistachios or saffron strands

TIPS & TRICKS 

  •  It’s important to use lemon wedges/lemon juice while making sugar syrup to prevent crystalization of sugar.
  • Use sour curd to make the batter.
  • The batter for Jalebi should be somewhat thick but flowy. If the batter is runny, you may add 1 or 2 tablespoons of refined flour to it and whisk it again.
  • If you want the flavor of desi ghee in your jalebi but not fry them entirely in desi ghee, then as a workaround, you may take oil and add 3-4 tablespoon of desi ghee to it. This will also give a taste of desi ghee into jalebis
  • The spiral of jalebi should be closely made, otherwise, they will loosen out and jalebis wouldn’t hold together
  •  Don’t put the hot jalebis straightaway into the hot sugar syrup. Both sugar syrup and jalebi shouldn’t be very hot, else jalebis will get moist & soft
  • Don’t keep the jalebis for too long in the sugar syrup. The apt time of soaking jalebis is 30 to 40 seconds
